Pork Belly

I have always wanted to try to make it because as you all know, I have a love affair with pork. I slow cooked those two slabs in a 300 degree oven for three hours. Perfect on a 90 degree day, right? Anyway, most of it cooked while I baked in the sun. I came back to a cool dark apartment with the smell of pork fat heavy in the air. I decided that the side had to be healthy so I made soba noodles with tri color peppers, baby peas and artichoke hearts. Ying, yang and balance it is. I have a before and after pic. Of course you all know I was not going to eat those thick ribbons of fat. Not now, anyway. It is pool season and I have to be good.
